 450 g Triple Chocolate Anna Polyviou Cookie Dough
 50 g mini white marshmallows
 Vanilla bean ice cream
 Caramel sauce

Preheat a barbecue to medium-high. Place a heat-proof rack over the centre of the hot plate (this will stop the cookie from burning on the bottom).

Place the cookie dough into a skillet or flame-proof dish (I used an 18cm square skillet) and press into the corners to create an even layer.

Place the skillet on the elevated rack. Close the lid and bake for 8-10 minutes until golden. Carefully remove from the barbecue using oven mitts, and scatter mini marshmallows on top.

To serve, place the pan in the center of the table and serve with ice cream and caramel sauce for an extra delicious finish.
