For the base, place the almonds and walnuts in the Vitamix blender and process to a fine crumb. Add the dates, vanilla and coconut oil and process until just combined. Press the base into a lined 20x20cm tin.
For the filling, place all the ingredients into a high-powered blender and blend until smooth and creamy.
Pour the filling onto the base and place in the freezer to set for 1-2 hours.
Remove from the freezer 20-30 minutes before slicing. Serve topped with fresh strawberries.
