This pea, avocado, feta and mint salad should serve you the daily dose of healthy goodness you need!

Bettina Jenkins, National Culinary Manager at Winning Appliances, offers this simple, tasty and healthy salad recipe for those out there who would like a fresh start this February. It’s never too late!

 500g packet of frozen peas
 150g sugar snap peas
 ⅔ cup shredded mint
 1 avocado, cubed
 100g crumbled feta
 2 tbsp extra virgin olive oil
 Grated rind of 1 lemon
 2 tbsp lemon juice
 Salt and pepper, to taste
 Mint, to serve

Place peas and sugar snap peas into a small perforated steam oven tray; set steam oven to 100°C; add peas and cook for 5 minutes or until just tender. Drain under cold water and pat dry with paper.

Place peas in a serving bowl with mint, avocado and feta; pour over combined oil, rind, lemon juice and salt and pepper to taste; mix gently, sprinkle with mint and serve immediately.

Recipe Notes 

  • This recipe can be prepared, undressed, a few hours in advance and stored, covered with plastic film, in the fridge. Pour over the dressing just before serving.
