Halo Top®’s Yummy and Healthy Choc Chip Oat Cookie Sandwiches

Halo Top® is starting 2022 on a super sweet note with an entirely new flavour, adding Triple Chocolate cake to their range of plant-based pints made with oat milk. The deliciously creamy line-up is both dairy-free and vegan-friendly, taking the brand’s better-for-you approach to an entirely new level.

Wherever you may fall on the foodie spectrum – vegan, flexitarian, climatarian, health-conscious – fans can agree that oat milk is having a moment, and Halo Top® has officially jumped on the bandwagon. Still providing the signature Halo Top® experience, the oat milk range contains 400 calories or less, 20 grams of protein, and ⅓ the amount of sugar per tub compared to regular ice creams. Sitting alongside the much-loved Chocolate Chip Cookie Dough and Chocolate Hazelnut, Triple Chocolate Cake is the newest dessert to join the plant-based party, now available at Woolworths and Coles, nationwide.

For those on the hunt for something a little more decadent, the new Triple Chocolate Cake combines rich chocolate ice cream with pieces of fudgy chocolate cake throughout. Within the Chocolate Chip Cookie Dough tub, expect to delight your senses with a blend of vanilla ice cream, cookie dough bites, and chocolate chips. Alternatively, the crowd-pleasing Chocolate Hazelnut features the Halo Top® creamy chocolate ice cream infused with that toasty hazelnut flavour.

 150g Vegan Butter
 ½ cup brown sugar
 ½ cup caster sugar
 1 flax egg (1 Tbsp ground flax + 2 Tbsp water)
 1 tsp vanilla
 1 cup plain flour
 1 tsp baking powder
 2 cups rolled oats
 1 cup dark chocolate chips
 1 tub Halo Top Chocolate Chip Cookies dough

Preheat the oven to 180C.

Make the flax egg by combining flax and water and allow it to sit for 5 mins.

Beat butter and sugars together in a bowl with electric beaters until light and fluffy. Beat in flax egg and vanilla, then fold in the flour, baking powder, rolled oats and chocolate chips. Form 1 tbsp mixture into a ball and flatten slightly with the palm of your hand. Place on a lined baking tray and bake for 15min. Allow to cool completely.

Once cooled, match the cookies in pairs of similar sizes. Top one cookie with a scoop of Halo Top Chocolate Chip Cookies dough and press another cookie on top to sandwich together. Serve immediately or store in the freezer until needed!
