Bubbly Espresso Pancakes

For the pancakes:
125ml SodaStream
sparkling water
60ml espresso coffee
1.5 cups plain flour
1 tbsp baking powder
2 tbsp caster sugar
1/2 tsp salt
1 egg, lightly whisked
1/2 cup milk
2 tbsp unsalted butter, melted
Extra butter for frying pancakes
For the caramel sauce:
200g caramel chips
80ml thickened cream
1To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre Bottle with cold water and carbonate.
2Brew 2 shots of espresso coffee using a coffee plunger.
3Take a large mixing bowl and add in flour, baking powder, caster sugar, and salt. Mix well.
4Make a well in the centre and add the egg, milk, SodaStream sparkling water, cooled espresso and melted butter.
5Combine using a hand blender with the whisk attachment.
6Heat a large non-stick frying pan over medium heat.
7Grease the pan with butter. Add 1/4 cup of the mixture into the pan for each pancake. Cook pancakes for 2 minutes or until bubbles appear on the surface, then turn and cook for a further 1-2 minutes or until cooked through.
8Set aside and keep warm under aluminium foil.
9Combine caramel chips and cream in a heatproof bowl.
10Microwave for 1-2 minutes until the mixture has melted and has come together.
11Drizzle pancakes with caramel sauce and enjoy.
