Daen Lia’s Blue Cheese, Prosciutto, Pear, and Hot Honey Toastie

For the hot honey:
 500ml honey
 2 tablespoons chili flakes
 1 teaspoon tabasco sauce
 2 tablespoons lemon juice
For the toasty:
 2 slices white sourdough bread
 50-75g Fromager d’Affinois Bleu cheese cut into thick strips
 Half a pear cut into thin strips
 50g prosciutto shaved into thin slices
 1 tablespoon hot honey
 2 tablespoons mayonnaise
 50g butter
 1 tablespoon olive oil
For the hot honey:

Combine all ingredients in a small pot. On medium heat, cook until the honey is bubbling and has a runny consistency.

As this makes a large batch, store it in a sterilized jar for several months in your pantry.

For the toasty:

Spread 1 tablespoon of mayonnaise onto the bottom piece of bread for your toasty and flip over. Begin with a layer of Dijon mustard, followed by the Fromager d’Affinois Bleu cheese, topped with slices of pear, and lastly the prosciutto. Finish off with a drizzling of hot honey.

Top the toasty with a slice of bread and spread 1 tablespoon of mayonnaise over the top.

In a cast iron pan on low heat, melt the butter and bring the olive oil to heat. When the butter is slightly foaming, place the toasty into the pan and cook on very low heat for 10 minutes per side or until golden and crispy. Serve immediately.
