Gluten Free Apple and Cinnamon Muffin with Crumble Topping

For the muffins:
 YesYouCan Apple and Cinnamon Muffin Mix
 80 g melted margarine
 160 g water
 2 eggs or YesYouCan Vegan Egg Replacer
 unsweetened applesauce
 Granny Smith and Honeycrisp apples
For the crumble toppings:
 2 cups almond meal
 2 tbsp brown sugar
 2 tbsp chilled butter

Combine YesYouCan’s Apple and Cinnamon Muffin Mix, eggs, oil, and water.

Mix the ingredients together with a spatula until well combined.

Chop apples into cubes and fold in the muffin mixture.

Line muffin tray with baking paper.

Scoop muffin mixture into the muffin tray.

Using a teaspoon, scoop applesauce in the center of the muffins.

Combine almond meal, sugar, and chilled butter and mix into a crumble.

Add almond meal or sugar as required to get a crumbly consistency.

Sprinkle the crumble mixture on top of the muffins.

Bake for 30 minutes at 160C fan-forced oven.
