Satay Chicken Skewers

 500g chicken tenderloins
 1 cup Mayver’s Satay Sauce
 Crushed peanuts to serve
 Coriander to serve
For the Satay Sauce:
 1/4 cup finely chopped onion
 1 small garlic clove, finely chopped
 1/2 cup Mayver’s Smooth Peanut Butter
 1/4 cup water
 1 tsp hot chilli sauce
 1 tbsp soy sauce or tamari for gluten free
 1 tsp honey
 2 tbsp lime juice
For the Satay Sauce:

Heat 1 tbsp olive oil in a small saucepan.

Add the onion and garlic to the pan and cook on low heat until soft, ensuring no browning is occurring.

Add Mayver’s Smooth Peanut Butter, honey and water and mix until combined.

Turn heat down to low and add in the soy sauce and lime juice, and mix until combined, removing from heat quickly after.

For the Satay chicken skewers:

Marinate the chicken tenderloins in Mayver’s Satay Sauce for a minimum of 1 hour. Refrigerate whilst marinating.

Once the chicken has marinated, place a skewer through the centre of each tenderloin, allowing at least 5cm of the skewer to remain bare.

Heat a frying pan with 2 tbsp of oil of choice.

Place the chicken satay skewers in the heated pan.

Cook each side of the tenderloins for approximately 4 minutes or until cooked through.

Remove skewers from heat and drizzle with extra satay sauce.

Top with crushed peanuts and coriander to serve.
